Aviyal

Aviyal is a traditional food for Tamilnadu and Kerala. Aviyal is a coconut based curry that is loaded with veggies. It goes well with adai and with rice.

Ingredients

  1. Finely Chopped Onion – 1/2 Cup
  2. Finely Chopped Tomato – 1 medium
  3. Carrot – 1 small
  4. Potato – 1 small
  5. Drumstick – 1
  6. Shredded Coconut – 1/4 Cup
  7. Jeera – 2 Tsp
  8. Green Chili – 4
  9. Whisked Curd – 1/2 cup
  10. Salt – 2 tsp (as needed)
  11. Coconut Oil – 2 tbsp
  12. Turmeric Powder – 1/2 tsp

Sauté

  1. Mustard Seeds – 1 teaspoon
  2. Urad dal – 1 teaspoon
  3. Curry leaves – 1 sprig

Preparation method

  1. Wash and drain all the vegetables. Cut them into length-wise pieces.
  2. Grind coconut, jeera, green chili, and salt into a smooth paste.
  3. Medium heat a pressure cooker.
  4. Pour coconut oil, sauté mustard seeds and Urad Dal. After it splutters, add curry leaves.
  5. Add the finely chopped onions. After the onion turns color, immediately add the tomato. Cook it for 2 minutes.
  6. Then add turmeric powder and all the chopped vegetables. Cook it for 5 minutes.
  7. Now add the grinded smooth paste into the pressure cooker and add 1/2 cup of water.
  8. Close the pressure cooker and wait for 2 whistles.
  9. After the pressure is released, add the whisked curd to the pressure cooker. Stir it well. Cook it for 2 minutes.
  10. Serve it hot with adai.
