Aviyal is a traditional food for Tamilnadu and Kerala. Aviyal is a coconut based curry that is loaded with veggies. It goes well with adai and with rice.

Ingredients
- Finely Chopped Onion – 1/2 Cup
- Finely Chopped Tomato – 1 medium
- Carrot – 1 small
- Potato – 1 small
- Drumstick – 1
- Shredded Coconut – 1/4 Cup
- Jeera – 2 Tsp
- Green Chili – 4
- Whisked Curd – 1/2 cup
- Salt – 2 tsp (as needed)
- Coconut Oil – 2 tbsp
- Turmeric Powder – 1/2 tsp
Sauté
- Mustard Seeds – 1 teaspoon
- Urad dal – 1 teaspoon
- Curry leaves – 1 sprig
Preparation method
- Wash and drain all the vegetables. Cut them into length-wise pieces.
- Grind coconut, jeera, green chili, and salt into a smooth paste.
- Medium heat a pressure cooker.
- Pour coconut oil, sauté mustard seeds and Urad Dal. After it splutters, add curry leaves.
- Add the finely chopped onions. After the onion turns color, immediately add the tomato. Cook it for 2 minutes.
- Then add turmeric powder and all the chopped vegetables. Cook it for 5 minutes.
- Now add the grinded smooth paste into the pressure cooker and add 1/2 cup of water.
- Close the pressure cooker and wait for 2 whistles.
- After the pressure is released, add the whisked curd to the pressure cooker. Stir it well. Cook it for 2 minutes.
- Serve it hot with adai.
