Carrot & Cabbage Poriyal

Poriyal is a Tamil word for fried, or sometimes sautéed vegetable dish. Carrot and cabbage has a good source of a dietary fiber. It can served as a lunch side with almost all curry/kulambu.

Total preparation time:15 minutes

Ingredients

  1. Carrot-2 medium size
  2. Cabbage -1/4 in a medium-size cabbage
  3. Onion-1/2 big onion
  4. Red Chili – 2
  5. Shredded coconut – 2 teaspoon
  6. Salt- 3/4 teaspoon as needed

  1. Mustard – 1teaspoon
  2. Urad dal – 1teaspoon
  3. Red chili – 2
  4. Curry leaves – 1 sprig

Preparation method

  1. wash and peel carrot skin finely shred the carrot & cabbage in the shredder.
  2. In a pan pour oil and saute mustard, urad dal, red chili, after it splutters add curry leaves. Then add finely chopped onion and let it cook and add shredded carrot & cabbage add required salt to cover it with a lid.
  3. Let it cook for 5minutes on medium heat.
  4. Add shredded coconut to that at the end and mix it.
