Chettinadu Chicken Varuval

Chicken is lean meat with high nutritional value. It contains a great source of selenium, phosphorus, and antioxidants. Chettinadu Chicken varuval is a traditional food made with whole spices and it goes well with rice and chapati.

Total Preparation time: 40 Minutes

Ingredients 

  1. Onion – 1 (large)
  2. Tomato – 1 (Large)
  3. Green Chili – 4
  4. Turmeric Powder – 1/2 tsp
  5. Curry Leaves – 1 Sprig
  6. Salt – 2 tsp (as needed)
  7. Ginger Garlic Paste – 1 tbsp
  8. Boneless Chicken – 500 Grams
  9. Fennel seeds – 1 tsp
  10. Kalpasi / Black Stone Flower – 3

Ingredients To Grind

  1. Coriander Powder/ Seeds – 2 tbsp
  2. Whole Black Pepper – 1 tsp
  3. Jeera – 2 tsp
  4. Fennel Seeds – 2 tsp
  5. Cinnamon Sticks – 4 small
  6. Cardamon – 4
  7. Cloves – 3
  8. Kalpasi / Black Stone Flower – Few
  9. Whole Red Chili – 6
  10. Star Anise – 1

Prepartion Method

  1. Dry roast all the things listed under “Ingredients To Grind”. Then grind them into a fine powder.
  2. Medium heat a cast-iron skillet. Pour oil, add the fennel seeds, and Kalpasi/ Black Stone Flower. After it splutters add the curry leaves.
  3. Add the onions, fry it till it turns color. Now add the tomatoes and sauté it well.
  4. Then add the ginger-garlic paste. Mix it well, along with that add turmeric powder and salt.
  5. Now add the boneless chicken and the grinded spices. Mix everything well. Add a cup of water and cook it in a low flame.
  6. Cover it with a lid, stir it after a few minutes.
  7. Once the chicken is completely Cooked and serve it hot.
