Egg Plant Kosumalli

Egg plant has a great source of vitamins and minerals. It is also known as brinjal. This scrumptious dish goes well with dosa or idly.

Total preparation time: 20 minutes

Ingredients

  1. Eggplant – 5 medium 
  2. Onion – 1 medium
  3. Tomato- 2 medium
  4. Chili powder – 2 tsp
  5. Salt (as required)

Sauté

  1. Mustard – 1 teaspoon
  2. Urad dal – 1 teaspoon
  3. Curryleaves – 1 sprig

Preparation method

  1. Medium heat the pressure cooker.
  2. Pour oil into the pressure cooker, add mustard seeds and urad dhal. After it splutters add the curry leaves.
  3. Then add the finely chopped onions, mix it until it turns into the color golden brown. Then add the finely chopped tomato, cook it for 2 minutes
  4. Now add lengthwise chopped eggplant and  cook for 5 minutes and  Add chili powder and salt as needed. Cover the pressure cooker using the lid and wait for 3 whistles. 
  5. Mash the eggplant using ladle.
  6. Serve it hot with dosa or idly.
