Eggplant​ Poriyal

Eggplant is a high fiber, low calorie food that is rich in nutrients and comes with many health benefits. Eggplants are a simple and delicious addition to any healthy diet. It can be served as a side with white rice and kulambu/curry.

Ingredients

  1. Eggplant – 4 medium size
  2. Onion – 1 medium
  3. Red chili powder – 1/2 teaspoon
  4. Turmeric powder – 1/4 teaspoon
  5. shredded coconut – 2 teaspoon.
  6. Oil – 1 and 1/2 tablspoon(as needed)
  7. Salt -1 teaspoon( as needed )

Sauté

  1. Mustard – 1teaspoon
  2. Urad dal – 1teaspoon
  3. whole Red chili – 2
  4. Curry leaves – 1 sprig

Preparation method

  1. Wash Eggplant, onion& and chop it in kathirikai lengthwise and finely chop the onion.
  2. Medium heat a pan. Pour oil saute mustard, urad dal after it splutters add whole red chili, curry leaves and add onion, when it turns color add turmeric powder, chili powder, Cook for 12 minutes.
  3. Garnish it with shredded coconut .
