Eggplant​/ Kathirikai Pulikulambu

Kulambu is common dish in Tamil cuisine. It can be served with white rice for lunch.

Total preparation time:25 minutes

Ingredients

  1. Eggplant – 5 medium size
  2. Garlic – 10
  3. Onion – 1 medium
  4. Tomatoes – 1
  5. Tamarind paste/juice – 2 -3 tablespoon
  6. Turmeric powder – 1/4teaspoon
  7. Chili powder – 1 and 1/2 teaspoon
  8. Coriander powder -1 and1/2 teaspoon
  9. Jeera powder – 1 teaspoon
  10. Sombu powder – 1teaspoon
  11. Shredded coconut – 1tablespoon
  12. Seasame 0il – 2 tablespoon
  13. Asafoetida – a pinch
  14. Salt -1 and 1/2 teaspoon( as needed )

Sauté

  1. Mustard – 1teaspoon
  2. Urad dal – 1teaspoon
  3. Fenugreek – 1/4teaspoon
  4. Curry leaves – 1 sprig

Preparation method

  1. Wash Eggplant, garlic, onion& tomato and chop it in kathirikai lengthwise and finely chop garlic, onion &tomatoes
  2. Grind shredded coconut in a mixie with little water keep it aside.
  3. Pour oil saute mustard, urad dal, fenugreek &curry leaves and add onion, tomatoes when it turns color add turmeric powder, chili powder, coriander powder, jeera, &sombu powder add tamarind paste with little water. Cook for 12 minutes. Add ground coconut now let it cook for another 3 minutes.
  4. Make sure it cooked well.
