Kulambu is common dish in Tamil cuisine. It can be served with white rice for lunch.

Ingredients
- Eggplant – 5 medium size
- Garlic – 10
- Onion – 1 medium
- Tomatoes – 1
- Tamarind paste/juice – 2 -3 tablespoon
- Turmeric powder – 1/4teaspoon
- Chili powder – 1 and 1/2 teaspoon
- Coriander powder -1 and1/2 teaspoon
- Jeera powder – 1 teaspoon
- Sombu powder – 1teaspoon
- Shredded coconut – 1tablespoon
- Seasame 0il – 2 tablespoon
- Asafoetida – a pinch
- Salt -1 and 1/2 teaspoon( as needed )
Sauté
- Mustard – 1teaspoon
- Urad dal – 1teaspoon
- Fenugreek – 1/4teaspoon
- Curry leaves – 1 sprig
Preparation method
- Wash Eggplant, garlic, onion& tomato and chop it in kathirikai lengthwise and finely chop garlic, onion &tomatoes
- Grind shredded coconut in a mixie with little water keep it aside.
- Pour oil saute mustard, urad dal, fenugreek &curry leaves and add onion, tomatoes when it turns color add turmeric powder, chili powder, coriander powder, jeera, &sombu powder add tamarind paste with little water. Cook for 12 minutes. Add ground coconut now let it cook for another 3 minutes.
- Make sure it cooked well.
