Medhu Vada

Medhu vada is a South Indian fritter. It looks similar to doughnut, with a crispy outside and soft inside. It can be served with Pongal,sambar and chutney as a breakfast or served as snack with a tea.

Total Preparation time: 3 hours

Ingredients 

  1. Urad dal – 1 cup
  2. Onion Medium size – 1
  3. Green Chili – 5
  4. Curry leaves – 1 sprig
  5. Coriander leaves – 1 sprig
  6. Salt – 1 and 1/2 teaspoon (as needed)
  7. Oil to fry (as needed)

Prepartion Method

  1. Wash and Soak the urad dal for an hour.
  2. Drain the water and grind it in the wet Grinder by adding small amount of water .
  3. Keep checking the grinder every 5 minutes and sprinkle the water whenever you feel the batter is too thick or grinder is having hard time to grind.
  4. It may take 30 to 40 minutes approximately to get the batter ready. Make sure vada batter is soft and a fine paste. Keep it in a separate bowl once it is done
  5. Then add finely chopped onion, green chili, curry leaves, coriander leaves and add salt as needed. Mix it well with the batter.
  6. Medium heat the vada pan and add sufficient oil to fry the vada
  7. Wet your hands with water and make a small ball shape from your batter.
  8. Place the ball shape batter in a greased banana leaf/or your hands and shape the edges and make a hole in the center of the vada.
  9. Gently drop the vada into the oil and fry it by turning both sides.
  10. After it is done, serve it with sambar and chutney.
