Rava Payasam is a traditional Indian sweet, Pudding made using milk, grains, and sugar. It is prepared during festivals or on any special occasion. It can be served as a dessert to a meal or dinner.

Ingredients
- Fine Rava – 1/2 cup (it gives a creamy texture)
- Ghee – 1 tablespoon
- milk – 1 and 1/2 cup milk
- Water – 1/2 cup water
- Sugar – 1/2 cup(as needed)
- Cashew nut – 10
- Raisins – 5(optional)
- Salt – a pinch
- Saffron strands

Prepartion Method
- Take a Pan. Fry rava in a low flame for 1 to 2 minutes. It gives a nice aroma to the rava as well as helps to avoid lumps while cooking in water. Make sure not to burn rava while roasting. It will ruin the taste of the payasam.
- Keep the roasted rava in the dry plate.
- Medium heat another pan. Pour ghee add cashew nut, raisins and fry till it turns golden brown color. keep it aside on a separate plate.
- Then add enough water. Once the water starts boiling, reduce the flame from medium to low heat and start adding the roasted rava little by little stir this mixture with the ladle. Close it with a lid for 1 minute.
- Make sure to mix the rava without lumps and at last add sugar to these cooked rava, add already boiled milk into it and then mix it well.
- Then add a pinch of salt, mix it well to enhance the
sweetness . - Rava payasam is ready. Garnish it with cashew nut and few saffron strands.
