Sweet Pongal

Sweet pongal or sakkarai pongal is traditionally prepared in South India for the festivals or any special occasions.

Total Preparation time: 30 minutes

Ingredients

  1. Rice – 1/2 cup
  2. Moong dal – 1/4 cup
  3. Jaggery powder – 3/4 cup
  4. Water – 3cups
  5. Salt – 1/2 teaspoon (to enhance sweetness)
  6. shredded coconut – 1 tablespoon

Sauté

  1. Ghee – 2 tablespoon
  2. Cashew nut – 10
  3. Raisins – 5 (optional)

Preparation method

  1. Wash the rice and moong dal in water and drain the water.
  2. Cook rice & moong dal in a pressure cooker with enough water. It may take 3 to 4 whistles to cook.
  3. Then mash the cooked rice & moong dal with a ladle then add jaggery powder and mix it well.
  4. Medium heat a pan. Pour ghee and sauté cashew nut till it turns to golden brown color. Mix roasted cashew nut, raisin & freshly shredded coconut with cooked rice & dal add little salt to enhance Pongal sweetness.
