Vegetable kurma

Vegetable kurma is a side dish. It goes well with chappathi,paratha,coconut milk rice,idli&dosa.

Ingredients

  1. Onion – 1 medium size
  2. Tomato -1 medium size
  3. Carrot -2 small size
  4. Potato -1 medium size
  5. Coriander leaves -1sprig
  6. Oil -1 and 1/2 tablespoon
  7. Salt -1teaspoon(as needed)

Sauté

  1. Mustard – 1/2 teaspoon
  2. Curry leaves -1 sprig
  3. Black stone flower/kalpasi – 2
  4. Cinnamon stick – 2 small

Grind (finely grind it in mixie)

  1. Shredded coconut-1/2 cup
  2. Chili powder-1 and 1/2 tsp
  3. Coriander powder-1 and 1/2teaspoon
  4. Garam masala powder-1teaspoon

Preparation method

  1. Wash onion, tomato, carrot, potatoes and chop them into small cubes.
  2. Medium heat a pressure cooker . Pour oil into the pressure cooker. Sauté mustard, curry leaves, cinnamon stick, black stone flower.
  3. After it splutters add onion wait until it cooks add tomato cook for 2 minutes. Then add carrot & potato, stir it for few minutes.
  4. Pour the grinded ingredients inside the pressure cooker and add salt as needed , and water based on the consistency.
  5. It may take 2 to 3 whistles to cook.
  6. Finally garnish it with coriander leaves.
