Vegetable kurma is a side dish. It goes well with chappathi,paratha,coconut milk rice,idli&dosa.
Ingredients
- Onion – 1 medium size
- Tomato -1 medium size
- Carrot -2 small size
- Potato -1 medium size
- Coriander leaves -1sprig
- Oil -1 and 1/2 tablespoon
- Salt -1teaspoon(as needed)
Sauté
- Mustard – 1/2 teaspoon
- Curry leaves -1 sprig
- Black stone flower/kalpasi – 2
- Cinnamon stick – 2 small
Grind (finely grind it in mixie)
- Shredded coconut-1/2 cup
- Chili powder-1 and 1/2 tsp
- Coriander powder-1 and 1/2teaspoon
- Garam masala powder-1teaspoon
Preparation method
- Wash onion, tomato, carrot, potatoes and chop them into small cubes.
- Medium heat a pressure cooker . Pour oil into the pressure cooker. Sauté mustard, curry leaves, cinnamon stick, black stone flower.
- After it splutters add onion wait until it cooks add tomato cook for 2 minutes. Then add carrot & potato, stir it for few minutes.
- Pour the grinded ingredients inside the pressure cooker and add salt as needed , and water based on the consistency.
- It may take 2 to 3 whistles to cook.
- Finally garnish it with coriander leaves.
